    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The concentration of quat based food contact surface sanitizer in spray bottles and the sanitize sink was undetectable. Solution was remade (dispensed from the quat sanitizer dispenser), and the concentration was still undetectable.Have the quat sanitizer dispenser repaired or adjusted. Until it is dispensing solution at the required concentration, make the solution by hand.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The ambient air temperature of the drawer coolers measured 10 degrees Celsius. Internal temperature of portioned cooked chicken stored in the drawer cooler measured 9 degrees Celsius. Chicken was ordered to be discarded. Have the drawer coolers adjusted, serviced or repaired. Do not store perishable food in this cooler until it can maintain food temperatures at 4 degrees Celsius or lower at all times.

      • Surfaces of the ventilation canopy had grease accumulation.Clean surfaces of the ventilation canopy. Ensure these areas are cleaned on a regular basis.
