      • Observation:
      • The handwashing sink in the front service area has clean dishes, and the paper towel dispenser is found beside food. Dirty water, from people washing their hands, splash and land on the clean dishes. Water dripping from staff hands, as they reach to get a paper towel will fall onto the food. This may contaminate the dishes and food.
      • Corrective Action(s):
      • 1) Install splash guards and/or divider panels on each side of the hand washing sink to prevent water from splashing on food and clean dishes. The splash guards and/or divider panel shall be made of a durable, sealed, cleanable and smooth material (stainless steel, plexiglass, etc.).
      • 2) Relocate the paper towels dispenser, so that it is above the handwashing sink.

      • Observation (CORRECTED DURING INSPECTION): Cooked sausage rolls are being stored at room temperature in the Tea Garden. Sausage rolls contain protein/meat, which allows bacteria to grow in at room temperature.
      • Corrective Action(s): Immediately store the sausage rolls in a cooler or a hot holding unit to prevent bacteria from growing in them. During the inspection, the sausage rolls were placed in the back cooler in the Tea Garden fridge. They are not on display or visible for sale.

      • Observation: Dust accumulation found on the exhaust filters. The dust could fall into food. Next service date was May 2022, as per sticker on unit.
      • Corrective Action(s): Immediately call a professional company to clean the exhaust canopy and filters. Ensure all accessible surfaces of the canopy and filters are cleaned, on a regular basis, between professional cleaning.
