    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation:
      • 1) Accumulation of dust and food found on the ceiling tiles around the air diffusers. The dust can fall into food and contaminate it.
      • 2) Minimal food accumulated on the exhaust canopy filters, and the exhaust canopy service stickers indicates the next cleaning was in June 2025. Accumulation of food and grease on and inside the exhaust canopy will attract pests and is a fire hazard.
      • 3) Mould accumulating on the interior surfaces of the ice machine. The mould could come into contact with ice and contaminate it.
      • Corrective Action(s):
      • 1) Clean the ceiling tiles to remove the dust and food. Clean the ceiling tiles on a regular basis, add this to your cleaning schedule.

      • 2) Have the exhaust canopy and filters professionaly cleaned and service. Follow the service schedule on the sticker.

      • 3) Clean the interior surfaces of the ice machine to remove the mould. Clean the interior of the ice machine on a regular basis, add this to your cleaning schedule.

      • Observation:
      • Observed 2 stainless steel pots that have dents along the top lips. The dents have caused the pot to fold into itself and created areas that are hard to clean.
      • Corrective Action(s):
      • Discard the damaged pots, and any other damaged equipment or utensil. Ensure to inspect all cookware, equipment and utensils regularily for damage. Throw away any damaged items.

      • Observation: Minor food debris and residue observed on stand up freezers/coolers handles, under storage racks, under 3 compartment sink, on the floor near kitchen equipment, and along corners/crevices along bottom of walls.
      • Corrective Action: Ensure areas noted above are deep cleaned on a regular basis (once a week) to prevent build up and maintain sanitation of premises.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation:
      • 1) The exhaust hood and filters have some accumulation of grease, dust and flour. The exhaust hood and filters were required to be serviced in April 2024, as per service sticker. The accumulation of grease, dust and flour could create a fire hazard and attract pests.
      • 2) Accumulation of flour and food debri on hard-to-reach areas, and detailed cleaning of surfaces is needed. Areas and surfaces such as: floors under storage racks; walls behind & under prep tables, equipment & sinks; wire racks; exterior surfaces of food storage bins and lids; sides of equipment; and legs of equipment, prep tables, and storage racks.
      • Corrective Action(s):
      • 1) Immediately call a professional company to clean and service the exhaust hood and filters. Ensure to follow the schedule set out by the professional company.
      • **Correction date: June 30/24**
      • 2) Clean the mentioned areas with hot soapy water and scrub brush to remove flour, sugar and dough. Develop a regular schedule to complete detailed cleaning of surfaces and hard-to-reach areas.

      • Observation:
      • 1) The cold water handle is missing from the 3-comp sink tap. It is difficult to turn the cold water on and off.
      • 2) There are 2 drain pipes leaking under the 3-comp sink. Dirty water is dripping and pooling on the floor, this will attract and breed flies.
      • Corrective Action(s):
      • 1) Install a new cold water handle on the tap and secure it so the cold water can be turned easily on and off.
      • **Correction date: Today**
      • 2) Repair or replace the damaged drain pipes so they no longer leak. Wash the drain pipes so there no longer is dirty water accumulating on it. Mop up the pooling water on the floor to eliminate a water and breeding source for pests.
