- Observation:
- 1) Pipes connected to the steamer, and the sink beside the garburetor are leaking. Water is pooling on the floor, which will help breed flies.
- 2) The dishwasher and/or pipes connected to the dishwasher are leaking. Water is pooling on the floor, which will help breed flies.
- Corrective Action(s):
- 1) Repair the pipes so they no longer leak. Wash and clean the floor under the mentioned areas, as well as the drain pipes to remove food and water. This must be done throughout the day and before going home.

- Observation:
- 1) The ice making machine has mildew on the interior walls of the ice bin and on parts of the ice making mechanisms. The mildew could contaminate the ice and make patrons ill.
- 2) There is some dust and food debris on the wire shelving racks in the walk-in-cooler. The dust and food debris could fall into food.
- Corrective Action(s):
- 1) Clean the interior walls and mechanisms of the ice machine to remove the mildew. Sanitize the surfaces and then rinse off. Add the cleaning and sanitizing of the ice machine to your sanitation plan, so it is regularily cleaned.

- Observation:
- 1) The high temperature dishwasher had a rinse cycle temperature of 70.9C at the plate's surface (showing 130F on machine thermometer). The temperature is too low to kill bacteria and viruses (not sanitizing dishes).
- 2) Found cracked, chipped and/or damaged food containers and lids. Bacteria will grow in the cracks and pieces of plastic could fall into food.
- Corrective Action(s):
- 1) Immediately call a company to repair the dishwasher so the rinse cycle temperature exceeds 180F and is maintained for 10 seconds (at the manifold). Manually sanitize dishes in one of the sinks, after the dishes have gone through the dishwasher. Call our office to notify us when the dishwasher is fixed, so a follow-up inspection can be completed.

- Observation: Small amounts of mouse droppings observed at the base of the half-wall in the middle of the kitchen.
- Corrective Action(s): Clean and disinfect areas where mouse droppings are found (using bleach/water or another sanitizer chemical).
- *Ensure staff wear appropriate protective equipment (ie. gloves & masks) when cleaning up rodent droppings.
- *Monitor areas for new droppings/activity.

- Observation: 1) Water leak observed at the pre-wash station near the dishwasher (around the cover plate installed over the garburator opening).
- 2) Cutouts/holes observed in the half-wall in the centre of the kitchen. Rodent droppings visible through the openings at the base of the wall.
- Corrective Action(s): 1) Caulk/seal the perimeter of the metal cover plate and the 4 screw holes fastening the cover plate to the tabletop to stop the water leaks. Accumulating water on the floor can be used as a food/water source by pests.
- 2) Seal the cutouts/holes in the half-wall to reduce/eliminate harbourage areas for rodents.
