      • Observation:
      • Accumulation of flour found on the floor under the racks in the walk-in-cooler and walk-in-freezer; on the floor under the racks storing bags of flour and other ingredients; on table & equipment legs; and on the exterior surfaces of food containers and lids. This will attract pests.
      • Accumulation of spider webs on the upper racks above the dishwashing sinks and mixing equipment. The spider webs indicate cleaning hasn't been done in a long time, and they could fall into food.
      • Corrective Action(s):
      • - Wash and clean the mentioned areas at least 3 times a week to prevent the accumlation of flour and to remove it.
      • - Wash and clean the upper racks at least once a week.

      • Accumulation of flour found on the floor under the large wooden prep table; on the walk-in-freezer floor beneath racks; on the outside of food containers and lids; and on the legs of tables, equipment, and shelving racks. The flour will attract pests and rodents.

      • Clean the mentioned areas more frequently to prevent the accumulation of food.
      • - Floor under the large wooden prep table MUST be swept daily and mopped at least weekly.
      • - Walk-in-freezer floor MUST be swept at least weekly. Move racks away from walls so the floor underneath can be cleaned.
      • - Outside of food containers and lids MUST be swept daily, and washed at least weekly.
      • - Legs of tables, equipment, & shelving racks MUST be swept daily, and washed at least weekly.

      • Rodent bait/poison being used inside the food premises. Rodent bait is unsafe to use inside a food premises, as the bait could be spread to food surfaces via rodent feet & hands when they touch it.

      • Immediately stop using rodent bait/poison inside the food premises. Immediately place the secured bait box outside the back door. During the inspection, the owner moved the bait box outside.

      • Observation (CORRECTED DURING INSPECTION): Food contact surfaces and reusable dishware is not being sanitized. Employees are not using a food-grade sanitizer (eg. chlorine bleach solution) after washing dishes, bakeware, utensils, etc. Food-contact surfaces such (eg. prep table) are not being sanitized after use.
      • Corrective Action(s): All reusable dishware, utensils, bakeware and food contact surfaces must be sanitized using an approved food-grade sanitizer (eg. chlorine bleach & water solution, quaternary ammonia solution, etc.) frequently to eliminate pathogens.
      • *Demonstrated use of chlorine bleach as a food-grade sanitizer while on-site. (Mix 1/2 teaspoon of unscented bleach to 1 Litre of water to make a 100ppm chlorine sanitizer solution-suitable as a no-rinse sanitizer)
