- There are improper scoops being stored inside bulk ingredient bins. There are deli cups with no dedicated handle being used and stored inside bin, there are scoops with handles being stored in contact with ingredient.- Ensure all scoops have a dedicated hand piece and that the hand touch point is stored out of the product: the scoop should be stored separately in a clean container.

- The glass washer is not dispensing sanitizer. Sanitizer bottle was near empty and replaced at PHI request. After running for extended period of time, still no sanitizer dispensing.- Bar glassware to be washed in main dishwasher in kitchen until unit is repaired and sanitizer concentration verified. Owner had called Ecolab to come later the same day.- Ensure glass washer is dispensing 12.5-25 ppm iodine sanitizer. Sanitizer concentrations should be verified daily.
