- Observation (CORRECTED DURING INSPECTION): Surface sanitizer was not available at the time of the inspection. Staff was using NeuQuat for manual dishwashing as well as the surface disinfection. As per manufacturer's instruction, NeuQuat requires 10min contact time. Staff to obtain a different type of Quat sanitizer or use bleach as agreed at this time.
- Corrective Action(s): Ensure to prepare surface sanitizer in a labelled spray bottle or red buckets available on site to hold wiping rags.

- Corrective Action(s): Ensure to have 200ppm Quats available at all times during operation. Have all prep surfaces sanitized prior to initiating any food prep in the morning, after each possible contamination and every 2 hours during operation.
