- Proper procedures (no sanitation) are not followed for manual dishwashing at two (2) compartment dishwashing sinks.- Follow proper manual dishwashing procedures at all times.- Post the approved procedure poster (sent with this report) above the 2-compartment sink.- 1st Compartment: Wash and rinse utensils (this sink may also be used for - handwashing).- 2nd Compartment: Sanitize utensils using an approved sanitizer:Quaternary ammonium (Quats): 200 ppm, orChlorine-based: 100 ppmMinimum contact time: 2 minutesFinal Step: Air dry utensils on racks—do not towel dry.
