    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • 1. No sanitizing solution was prepared/ready for use in the cooking area. Ensure that whenever food handling is ocurring that a sanitizing solution is available.2. Spray bottle of sanitizing solution in the front area measured more than 200ppm chlorine. Ensure that a food grade sanitizing solution is prepared (i.e. 100ppm chlorine). Staff directed to mix a 100PPM chlorine solution.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • A staff purse was stored next to food on the dry food storage shelf. Ensure that personal items are stored separate from food and food handling equipment.
    • 09. Are chemicals stored and handled in a safe manner?
      • Spray bottle containing chlorine sanitizing solution was improperly labeled. Ensure that all containers of chemicals are clearly labeled to identify contents.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Cooked chicken and beef burgers were at 42C to 48C (internal temperature) in the hot holding unit. Ensure that food is cooked to at least 74C before placing in the hot holding unit. Hold hot foods at 60C or above. The hot holding unit must be preheated to at least 60C before it is used.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Chlorine test strips were unavailable upon request. Ensure that test strips for each type of sanitizing solution used onsite are available.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Cleaning is needed under the 2 compartment sink and on the legs of the deep fryer. Please clean as discussed.
