      • Observation: 1 sandwich prep counter cooler is not working. Cheese and sauces in food grade inserts are stored on ice, measured at 3C.
      • Corrective Action(s): Repair the cooler so that it maintains temperature at 4C or below. Do not store any food products in the cooler when not in service. Ensure that temperature is taken every 2 hours and to move products back into a functioning cooler at 4C or below or discard left over product.

      • Observation (CORRECTED DURING INSPECTION): 1. Bleach and detergent were stored on top of main ice machine. Chemicals should not be stored in food areas or on food equipment or surfaces.
      • 2. In water tank room there is a jar of italino spices container used to stored soap detergent. Do not use food containers to store cleaners and chemicals.
      • Corrective Action(s): Ensure cleaners and chemicals are properly labelled and stored only in designated chemical storage areas away from food and food equipment. Do not use food containers to store chemicals to prevent chemical contamination.

      • Observation: Routine repair and maintenance required in the following areas:
      • 1. Front bar area leaking sink facet. Repair required.
      • 2. Walk in cooler leaking ceiling fan. Repair required. Clean up spills as necessary to prevent slipping accidents.
      • 3. Cooking area broken service cooler. Repair if needed for service. Ensure unit can maintain 4C and below.
      • 4. Back kitchen dishwasher wall with damaged caulking and (black) debris build up. Cleaning and maintenance required.
      • Corrective Action(s): Clean and repair above items as per of regular maintenance. Correction required in two weeks. During daily shift ensure walk in cooler leak does not contaminate food products and pooling water does not pose as a slipping hazard.
