- 2. Unsalted garlic butter used for toast stored on counter at 24C for more than 2 hours.
- Corrective Action(s): Ensure all potentially hazardous foods such as cut fruit and vegetables or dairy products are stored in a cooler at 4C or below or used up within 2 hours if used as fresh condiments. The packaging of unsalted butter indicates "Keep Refrigerated" therefore, it must be stored at 4C and below when not in immediate use.

- 2. Pantry cooler on left of service line across from deep fryer cools slowly to reach 4C and below within 2 hours. While monitoring this unit it drops 2C degrees every 30 minutes to reach 4C and below. This is a busy unit and constantly in use and may not reach 4C or below over the course of dinner rush.
- Corrective Action(s): 1. Service dishwasher to ensure at last 71C can be reached at the plate to properly sanitize all dishes to prevent contamination of food equipment and utensils. This is PRIORITY before the coming busy weekend. Corrective action required in two days.

- Observation (CORRECTED DURING INSPECTION): Front of the house QUAT sanitizer bottles detected less than 50 ppm. The solution was too old and needed to be replaced.
