- Small amount of mouse droppings still observed on the cabinet on the right side of the dishwashing sink and near the washroom door.- Remove all the mouse droppings and clean and disinfect the affected areas.- Continue to retain the services of a professional pest control company to control and eliminate the pest infestation throughout the food establishment. Provide all documentation from the professional pest control company to an Executive Officer with Alberta Health Services, indicating the pest infestation is under control and in the process of being eliminated. Implement an ongoing integrated pest management program for the interior and exterior of the food establishment.

- Chlorine sanitizer solution initially prepared for use in the kitchen was tested >200 ppm. Operator prepared sanitizer solution and concentration was tested at 100 ppm during inspection. - As discussed, test the sanitizer concentration and ensure that sanitizer solution is available for use at all times for each food handling area.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Approximately 45 white eggs were left at room temperature and measured at 19.7°C during inspection. Operator discarded the eggs and was instructed to keep all shell eggs under refrigeration at ≤7°C.

- There was evidence of a mice infestation. Mouse droppings observed in the back storage area behind equipment and shelves, near backroom entrance, underneath the dishwashing area, underneath the utensil storage cabinet, undern the chest freezer, on the bottom shelves of prep tables, and hard-to-reach areas of the facility. - Remove all the mouse droppings and clean and disinfect the affected areas. Operator was cleaning the back storage area at the time of inspection.- It is recommended to increase the frequency of pest control visits to biweekly to prevent any further mouse activity.

- The bleach sanitizer was too strong and bleached out the test strips.- Remixed a 100 ppm bleach solution. A strong bleach solution was mixed for before operation use and following by a clean water rinse. ensure a food safe sanitizer is prepared to use during operation.

- 1. 2 door cooler in the front area was maintaining 11C. Cooked meat measured 9C. All high risk foods were moved to a cooler maintaining 4C. 2. Cooler in the back area was maintaining 9.8C. All high risk food was moved into a cooler maintaining 4C or less.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- The pump hand soap at the hand wash sink was broken and did not dispense soap. Ensure that all hand wash stations are stocked with soap and single-use paper towels at all times.

- An accumulation of dust was noted on the wall/ceiling near the 2 compartment sink. Please clean this area.
