      • Observation: The sanitizer in the low temperature dishwasher used for glassware washing registered <10 ppm chlorine even after several runs. Sanitizer line was primed. Adequate amount of sanitizer solution in the sanitizer container connected to the dishwasher.
      • Corrective Action(s): - Service or repair the low temperature dishwasher such that the sanitizer solution on plate surface during final rinse cycle registers at 50 ppm
      • - Two compartment sink is available for manual warewashing. Use two compartment sink to wash, rinse, sanitize and air dry utensils and equipment.
      • - Corrective date: 2 weeks
