      • Observation (CORRECTED DURING INSPECTION): Sanitizing step is skipped when manual warewashing.
      • Corrective Action(s): Ensure all utensils and food contact surfaces (scoops, meat saw equipment) are washed with detergent, rinsed with water, sanitized with an approved sanitizer (ex. bleach or quats) and air-dried.
      • Bleach available in non-meat processing sink area.
      • Quats sanitizer available in meat processing area.
      • Do not mix the two chemicals.

      • 401 - Adequate handwashing stations not available for employees [s. 21(4)]
      • Observation (CORRECTED DURING INSPECTION): Hand sink in non-meat processing area was obstructed (used to store mugs) and paper towel dispenser was empty.
      • Corrective Action(s): Ensure hand sink is always available to use and equipped with hot and cold running water, liquid soap and single-use towels.
      • Violation Score: 5
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Meat debris left on meat saw and last use was last night
      • Corrective Action(s): Ensure meat saw is washed and sanitized at least every 2 hours and at the end of operations. Do not leave meat saw in a dirty condition overnight. Correct immediately.
