      • Beef roast stored in a hot holding unit in the deli department was measured at an internal temperature of 48C. - Advised the manager to reheat the meat to 74C before returning it to hot holding. Corrected during inspection.- Ensure cooked high risk foods are maintained at 60C or warmer during hot holding.

      • Observed moderate fly activity in the dishwasher area of the Deli department. - Ensure the sink, the flooring underneath the sink, the exterior of the grease trap, the dishwasher, and garbage containers are maintained in a clean and sanitary manner to prevent harborage of flies. - Work with your pest control operator to monitor and control fly activity.

      • No test trips were available for the chlorine sanitizer solution in the Starbucks coffee area. Please provide chlorine test trips.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The hand sink in the Deli area was not equipped with a hand soap - the dispenser was empty. Corrected at the time of inspection.

      • Observed raw meat (chicken) being thawed (defrosted) in cold water that was not running in a sink in the Deli department. - Upon the PHI's direction, facility staff began defrosting the chicken under cold running water. - Safe thawing methods were discussed with staff: thawing in the cooler, thawing under cold running water, thawing in the microwave, or cooking from frozen.
