    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Vim cleanser and disinfectant was too strong for use as a sanitizer. Bottle tested above 400ppm for Quat strength. Facility kitchen had prepared bottle of chlorine sanitizer that tested satisfactory for chlorine concentration (between 100-200 ppm)Advised operator to also bring supplemental supply for preparing chlorine sanitizer onsite for use, in event the kitchen supply is not provided.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The pH test strips obtained by operator are not suitable for sanitizer concentration. Provided operator the information for obtaining chlorine test strips. Chlorine test strips should measure from 0-200 ppm chlorine.
