    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The Bleach solution in the front preparation area was measured between 50-100ppm.* New solution was made by the operator which was tested to be at 100ppm.-Ensure that the bleach solution is maintained at 100ppm.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Back kitchen hand sink was blocked by a garbage bin and no soap or paper towels were present for the sink.* Garbage bin was removed, and the soap and paper towels were refilled.-Ensure that the hand sink is always supplied with soap, warm water and single use paper towels.-Ensure that the hand sink is always accessible for hand washing.

      • No pest control records were available.-Ensure that the pest control records are available,

      • Wooden counter surface used to store breads had raw wood exposed.-Repaint/replace the wooden counter.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The brown chopping board had deep scratches and knife gorges.* The chopping board was removed.-Ensure that the chopping boards are smooth and easily cleanable and sanitized.

      • Mould was noticed on the frame of the small freezer and food debris was accumulated near the top corner of the freezer.-Clean the area.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1)Grime and food debris accumulation was observed under the fryers, stove and behind the cook line.-Clean the above-mentioned areas.
