- The low temperature dishwasher took more than 10 tries to achieve adequate chlorine sanitizer rinse concentration. Feed line for chlorine supply was readjusted in the stock bucket to draw into the unit.

- The ventilation canopy over the cookline: grease and dust was observed collecting on the surface of the baffles. Ensure regular schedule for cleaning of the baffles is completed to prevent buildup of grease and dust.

- Low-temp chlorine sanitizer rinse dishwasher was tested @6 cycle attempts but no chlorine residual was detected. Chlorine stock bottle is newly opened and was satisfactory. Advised facility to contact technician to troubleshoot. Chlorine rinse concentration should be 100 ppm at end of cycle.
