      • The chlorine dishwasher in the Comedy Club is measured at 0 ppm with chlorine test strips. Ensure that the dishwasher is maintained at 100 ppm chlorine. The operator replaced the chlorine sanitizer bottle, and the dishwasher was measured at 100 ppm chlorine during the inspection.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The chlorine dishwasher in the front service area of the main kitchen is in measured at 10 ppm with chlorine test strips. Ensure that the dishwasher is repaired to reach 100 ppm chlorine/bleach.

      • No hand soap in a dispenser is available at the handwashing sink in the concourse bar. Ensure that the indicated handwashing sink is equipped with hand soap in a dispenser.

      • 1. A buildup of grime is observed on the exterior surface of the walk-in freezer door. 2. A buildup of a syrup-like substance is observed on the floor in the Comedy Club bar. 1-2. Ensure that the indicated areas are cleaned and sanitized.
