- Observation (CORRECTED DURING INSPECTION): Wiping cloths were found at the grill station and at the front serving station. Bacteria can multiply rapidly on wiping cloths, which can be transferred onto food contact surfaces.
- Corrective Action(s): Ensure all wiping cloths are fully submerged inside a labelled container containing sanitizer. Change the sanitizer solution at least every 2 hours. Replace visibly soiled wiping cloths with clean wiping cloths when visibly soiled.The operator placed all wiping cloths inside buckets at the grill station and the front serving station at the time of inspection.

- Observation: 1. Raw chicken was stored beside gravy inside the walk-in cooler next to the grill.
- 2. A plastic container with no handle was found inside the flour bin
- Corrective Action(s): 1. Raw meat must be stored underneath cooked and ready-to-eat foods to prevent raw meat juices from contaminating the product. Corrected during inspection: the operator moved the gravy to a different shelf.

- Observation (CORRECTED DURING INSPECTION): A rubber spatula is observed to be cracked. Bacteria can build up inside the cracks of the rubber spatula. Bits of rubber could fall into the food
- Corrective Action(s): Ensure to use all utensils and equipment that is smooth and non-porous so that it can be properly cleaned and sanitized. The operator discarded the spatula.
