- Bleach/chlorine in a bucket was measured at 1000ppm bleach/chlorine test strips. Ensure bleach/chlorine sanitizer is maintained at 100ppm. The operator prepared a 100ppm bleach/chlorine sanitizer during the inspection.

- Several scoops without handles were observed in bulk spice storage containers in the dry storage room. Ensure scoops with handles are acquired.

- Several foods were observed to be uncovered including pork in the chest freezer and chili spice in a bulk container in the dry storage room. Ensure all foods are covered when being stored to help prevent contamination. The operator covered the indicated foods during the inspection.

- A plastic sheet with holes was observed to be duct-taped to the top of the freezer which makes the surface difficult to clean. Ensure the plastic sheet is removed to render the surface smooth and easy to clean.

- A wooden cutting board was observed with several cracks that make the surface difficult to clean and sanitize effectively.Ensure the indicated cutting board is discarded or replaced with an alternative cutting board that is smooth and easy to clean.
