      • Observation (CORRECTED DURING INSPECTION): High temperature dishwasher achieved a maximum temperature of 63.5C at the plate level during the final rinse cycle.
      • Corrective Action(s): Manually wash, rinse, sanitize (200 ppm QUAT or 100 ppm chlorine), and air dry all dishware and equipment until high temperature dishwasher is serviced to achieve a minimum of 71C/160F at the plate level or 82C/180F at the dishwasher temperature gauge.
