- Rice was measured at 27.9 degrees C internal temperature. - Operator reported they took the rice out of the fridge and were warming it up in the rice cooker at keep warm setting. Operator was educated that the keep warm setting is to keep it warm and that rice should be reheated to 74 degrees internal temperature before storing at keep warm setting. The rice was discarded during the inspection.
