- Lemon scented bleach is the only chemical on-site for sanitizing food contact surfaces. Lemon scented bleach contains a perfume that will remain on food contact surfaces.REQUIRED ACTION: obtain regular, unscented bleach for preparation of a 100 ppm chlorine sanitizing solution to be used on food contact surfaces.

- Records documenting pest control monitoring and activities are not being maintained.There is a large gap noted at the bottom of the back door of the facility. REQUIRED ACTION: print copies of the AHS pest control checklist and complete once a month. Keep these records on-site for review at future inspections.Seal the gap at the bottom of the back door in order to help prevent entry of pests.

- There was no probe-style thermometer available for monitoring cooking and cooling temperatures of foods. Please obtain a probe-style thermometer that is capable of measuring temperatures in the range of 0C to 100 C.

- There was no paper towel in a holder/dispenser at the front hand sink. Please obtain a paper towel holder/dispenser for the hand sink, and ensure that it is always stocked with paper towel.

- One set of lights in the kitchen is missing a shatter-proof guard in order to contain shards of glass in the event that a light bulb breaks. Please obtain a shatter-proof light cover or shatter-proof light bulb guards to cover the light bulbs.

- Cardboard boxes were being used to store bags of food inside the chest freezer. Discard the cardboard boxes as these are not washable. Use food-grade storage containers that are smooth, water-resistant and easy to clean for food storage purposes.
