Ambient air temperature of lower section ~ 14 degrees C. Condenstation observed inside the unit. Operator's accurate indicating thermometer reading ~ 12 degrees C.

- Observation: Time tracking is not being done properly; the food handler on duty indicated that the pizzas in the display were to be discarded at 5 pm, but only "1s" were writtten in the time tracking sheet. This is a very serious violation; the exact time that the pizza came out of the oven must be written on the time tracking sheet, as soon as the pizza is placed in the display.

- Observation: Approximately 20 slices of unserved pizza were observed being placed in the fridge. (These slices had already been placed in the display for over two hours. Food handler indicated that this is the manager's policy; that the pizza is going to be thrown out BUT that the manager wants to count the slices in the morning before they are actually thrown out. - Observation (CORRECTED DURING INSPECTION): No time tracking is available for pizzas on display. Holding temperature is around 35 Celsius. All pizza in the display was voluntarily discarded by the staff on site.
- ALWAYS use your time tracking for pizzas on display as this is an essential part of your food safety plan. Failure to maintain time tracking will result in progressive enforcement. This could be a violation ticket or a closure order.
