- Observation (CORRECTED DURING INSPECTION):
- - At the time of inspection bleach sanitizer solution well over 200ppm in spray bottle. 3 compartment sink not setup for manual warewashing.
- - Scoop for dispensing ice left inside the ice machine. Ice cream scoop left in container with standing water.
- Corrective Action(s):
- - Ensure during operation a 100ppm bleach sanitizer soution is prepared and available for use in a labeled spray bottle. Setup the 3 compartment sink for manual warewashing. Wash, rinse, sanitize in 100ppm bleach for 2 minutes then air dry all dishes, utensils, cutlery, equipment, etc.
- - Store all dispensing utensils outside of food products. Manually warewash the ice cream scoop after use or install a dipper well.
