- Observation (CORRECTED DURING INSPECTION):
- - Observed cooked brown sugar pearls at around 45C. It was inside a warmer unit that had cold water bath. Time label showed that the pearls were prepared at approx 2.5 hours ago.
- Corrective Action(s):
- - Item discarded at the time of inspection. Time label for brown sugar pearl is set for 4 hours; this is only feasible if the pearls are stored at 60C or above in a working warmer unit. Staff stated that the outlet was not working for the warmer. If the temperature of 60C or above cannot be maintained, the maximum time allowed in danger zone (4C - 60C) is 2 hours at which point the food item has to be discarded.

- - Wiping cloths are rinsed with water after soaking in bleach solution. There is no sanitizing action occurring when the food contact surfaces are wiped with these cloths

- Observation (CORRECTED DURING INSPECTION):
- - Observed 4 hour tracking being done for the room temperature held topping (boba). And the item past the holding time was still on the counter.
- Corrective Action(s):
- - All room temperature held toppings have to be discarded after 2 hours, not 4 hours. Ensure to change the setting for the labelling machine to list the time as 2 hours. Boba was discarded at the time of inspection.

- - Soap dispenser not working. It appears that the opening is blocked.
- - Access to the soap and paper towel is blocked by the equipment.
- Corrective Action(s):
- - Prep kitchen side does not have a handsink that is accessible. Ensure staff are washing hands while working in the prep area. Either move the equipment blocking the dispensers OR move the soap & paper towel dispensers so that they can be easily reached while using the handsink. Unblock the soap dispenser.

- - Using sanitizer does not replace handwashing. Ensure there is hand soap available by the handsink at all times. Staff replaced the content to liquid soap at the time of inspection.

- Observation (CORRECTED DURING INSPECTION):
- - Observed taro balls, cooked taro and brown sugar pearls in room temperature. No time tracking observed.
- - Cheese foam liquid in the cheese foam machine probed at 11.6C.
- - Undercounter cooler holding milk at around 10C ambient.
- - Tea cooler at around 10C ambient.
- Corrective Action(s):
- - Ensure room temperature held toppings are discarded every 2 hours in ambient. Employee has forgotten to put on the time tracking labels which was already generated in the computer. Holding time exceeded 2 hours. Products discarded.
- - Staff adjusted the holding temperature of the cheese foam machine but temperature of the liquid is not coming down. Immediately stop serving cheese foam. Do not serve cheese foam until the machine is able to hold the product at 4C or below.
- - Milk was moved to a working cooler. Repair/adjust the cooler temperature.
- - Staff stated the temperature of the tea cooler is fluctuating because it is being frequently used. Temperature record from this morning indicated 5C. Keep monitoring the cooler temperature. Advise all staff to close the cooler door tightly. If the cooler temperature cannot be brought back to 4C or below in a reasonable time window, operator to consider repairing or replacing the cooler.

- Chlorine sanitizer was made again at the time of inspection. Ensure they are measured at 100-200ppm. Change the small buckets for the wiping rags to a bigger one.
