      • Observation (CORRECTED DURING INSPECTION):
      • REPEAT VIOLATION: Cooked pearls observed in room temperature, measured at 30C.
      • Corrective Action(s):
      • - Staff stated that it was prepared 30 minutes ago. There is no time tracking done. Ensure to use either a timer or a manually written note to track 2 hours in room temperature then discard any left over.

      • Observation:
      • - 'Washed' utensils and containers are not properly washed. There are visible debris and sticky residue on the surfaces of inserts, lids, measuring cups etc.
      • - Food debris observed on the cooler counter surfaces. Numerous drip marks on the door surface.
      • - Loose left tea containers are stained.
      • - Excessive dust build up observed on the fan cover of the ice machine and undercounter cooler.

      • - Wash the inserts, lids, measuring cups again using proper three compartment sink dishwashing method.
      • - Clean all items mentioned above.

      • - No bleach sanitizer available. No bleach available on site. Staff stated that it ran out.

      • - Operation should not start without a sanitizer on site. Staff was able to obtain some bleach at the time of inspection. 200ppm bleach was made in the blue tub. Ensure to have one spray bottle of bleach available for use at all times. Equip an extra large of bleach on site.

      • - Place at least two tin cat traps for mouse monitoring.

      • - Cooked pearls observed in room temperature - measured at 21C. Operator stated that it was cooked approximately around 1.5 hours ago.
      • Corrective Action(s):
      • - Ensure to time track the pearls using a timer or a label. Pearls are to be discarded at 3:15pm. If this violation is observed again in the future, item will be discarded immediately.
