      • Observation (CORRECTED DURING INSPECTION):
      • - Observed large pot of stock at 60C on a trolley.
      • - Observed large pot of stock at 45C inside walk-in cooler.
      • Corrective Action(s):
      • - The volume of the stock is too much to allow proper cooling procedure (60C to 20C or below in 2 hours and 20C to 4C or below within 4 hours). Staff confirmed that they are portioned into smaller containers for storage but close monitoring will be required to check cooling procedure. Start cooling log to keep track and ensure proper steps are being followed.

      • - Observed a large tub of steaming broth inside freezer for cooling.
      • - Observed multiple 20L tubs of broth being cooled in the room temperature with lids on.
      • Corrective Action(s):
      • - Ensure to follow proper cooling procedure. 60C-20C or below within 2 hours (done in room temp) and 20C to 4C or below within 4 hours (done in cooler or freezer). Do not put hot products inside cooler as this might affect the equipment and the overall ambient temperature inside the cooler. Ensure to have the lids open when cooling for faster cooling.

      • Observation (CORRECTED DURING INSPECTION):
      • - Low temperature dishwasher had final rinse temp reaching 48.9C and the rinse water meassured at 10ppm.
      • Corrective Action(s):
      • - Chlorine sanitizer tub was switched as the previous one was around 70% done. Final rinse had 50ppm chlorine after switching to a new chlorine tub. Consult with the supplier to increase the dispensing level to consider weakening of the chlorine level over time.

      • Observation (CORRECTED DURING INSPECTION):
      • - Observed multiple bags of frozen raw pork meat stored directly in black garbage bags inside walk-in freezer.
      • Corrective Action(s):
      • - Staff stated that the meat was in the freezer for about 2 weeks. Garbage bags are chemically treated for scent. This is a typical chemical contamination of food item. Ensure to use only food-grade plastic bags for food storage. All items discarded at the time of inspection.
