    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • There was an accumulation of ice in the back of the front fridge which was causing the temperature of the fridge to be too high. The dipping sauces in the fridge were moved to working one.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • One of the lids for the flour bins was cracked at the time of the inspection.This was replaced once noted by inspector.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • There was an accumulation of dust on the fan cover in the walk in cooler.

      • Multiple wet/soiled cleaning cloths observed on food contact surfaces. Used cleaning cloths must be stored in a sanitizer bucket when not in immediate use. Corrected onsite.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Thermometer required in cooler storing dips.
    • 26. Have plans for construction or alteration of this facility been submitted for approval?
      • A smoker is being used outside at the back to make smoked beef brisket without the proper requirements in place (plumbed in sink, etc). Please discontinue use and remove from the facility.
