    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • There was no food contact surface sanitizer prepared initially.Bleach water solution was prepared during inspection. Concentration measured 100 ppm. Ensure that food contact surface sanitizer is prepared and readily available at all times when food is being handled.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The two temporary hand wash stations did not have hand soap available.Hand soap was purchased and placed at each temporary hand wash stations.
    • 17. Are general nuisance conditions, other than those noted in other violations, being prevented at this special event vendor (Non-Critical)?
      • One menu item was being deep fried in a pan of oil on the stove top.The kitchen being used for cooking has a restriction on their food handling permit prohibiting deep frying and grease laden cooking.
