      • Review of food handling records: receiving temperature of 43C and 55C observed on one of the days, and no reheating was recorded.-Ensure that managers audit records, that staff are trained on when food needs to be reheated, and that staff are trained to correctly fill in records-Facility manager confirmed understanding of expectations
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • 1) Paper towel dispensers are located directly above open food and clean dishes. Staff washing their hands would be dripping water onto these items.-Until paper towel dispensers are moved, ensure that counters/areas below the paper towels are free of open food or clean dishes2) Clean food containers were stored in the splash zone of the handwashing sink.-Store food containers in a sanitary location
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • 1) Handwashing sink was obstructed with trays.-Ensure handwashing sink is always accessible2) Designated handwashing sink was not being used, as water took minutes to get warm, while other sink's tap was immediately hot.-Ensure that staff are washing hands at the designated handwashing sink
