      • - Sanitizing spray bottle measured 400ppm QUATs.
      • Corrective Action(s): - Ensure low temperature dishwasher measured 50ppm chlorine at plate level at all times to have proper sanitizing of utensils and dishes. Check with test strips and have machine serviced if 50ppm chlorine cannot be maintained.
      • - Follow manufacturer's instructions of 2mL QUATs to 1L water for 200ppm QUATs concentration for food contact surfaces.

      • Corrective Action(s): The chemical bottle ran out and there was no chlorine sanitizer. After the sanitizer bottle was replaced, dishwasher primed, the concentration of sanitizer residual was measured at 50ppm chlorine concentration.

      • Observation (CORRECTED DURING INSPECTION): Dishwasher tested 0 ppm chlorine residual and is unable to sanitize properly.
      • Corrective Action(s): Prepare 100-200 ppm bleach sanitizer in the sink by mixing 1/2 cap of household bleach per 1L water. Manually sanitize all dishes, utensils, and equipment after washing in the dishwasher by submerging in the bleach sanitizer for 30 seconds. Allow all dishes, utensils, and equipment to air dry before use.

      • Observation: Sanitizer jug for the dishwasher measured 200 ppm chlorine, which indicates evaporation of chlorine.
      • Corrective Action(s): Replace with new sanitizer jug. Obtain chlorine test strips and ensure dishwasher can produce 50-100 ppm chlorine. Seal the opening of the sanitizer jug with plastic wrap and rubber band to decrease evaporation of chlorine.
