      • Corrective Action(s): Service and ensure high temperature dishwasher measures 71C at plate level to sanitize dishes properly. Use the 2 compartment sinks with 100ppm for the sanitizing step in the meantime. To be completed by Dec 12 2025.

      • Corrective Action(s): - Cover all containers of food stored in the coolers to protect from contamination
      • - Use scoops with handles and store them in a way that handle does not come in contact with food
      • - Oraganize the storage area to store all raw meats and eggs on bottom shelf or separate shelving unit, all cooked foods and ready to eat foods on top shelves to prevent cross contamination.

      • Observation (CORRECTED DURING INSPECTION): No sanitize step being performed during dishwashing. A commercial dishwasher was present but not being used. Bleach sanitizer was not available for sanitizing food prep surfaces at the time of inspection.
      • Corrective Action(s): Clean and sanitize all equipment and utensils as per the manual dishwashing sign. Sanitize food prep surfaces with 100-200 ppm bleach sanitizer at least every 4 hours. You can prepare bleach sanitizer by mixing 1/2 cap of household bleach per L of water.
