Raw meat must be stored below and separate from ready‑to‑eat foods to prevent cross‑contamination. Pork was moved to the bottom of the prep cooler at the time of inspection.

      • Bleach measured at 0ppm in kitchen spray bottle. Operator prepared 200ppm bleach solution during inspection.

      • Build up of grime and food debris noted in the cooking area and assembly area. Please thoroughly clean these areas to remove all grime and food debris. Cardboard also requires replacement as it cannot be cleaned. Bathroom door requires cleaning and build up of grime was noted around the handle.There was a build-up of grime and food debris underneath of all of the shelving units in the back of the restaurant. Soiled cardboard was being used on the shelves in the walk-in freezer and needs replacing. The walk-in freezer had a build-up of food debris and grime on the floor. - May 28th, 2025.

      • Food in the walk-in fridge was being covered by soiled cloths. Operator removed cloths and covered them with food bin lids. Please ensure that all food is stored in and covered by clean, food-grade materials and containers.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The hood vent was past its service date.Please ensure that a certified company services your hood vent.

      • Lettuce stored in raw meat in the cooler. Operator reorganized cooler during inspection. The rest of the cooler was organized appropriately.

      • Prep cooler was >4C upon inspection. Thermometer in cooler showed same temperature.Operator turned down cooler during inspection and will monitor with thermometer and IR thermometer.

      • Probe thermometer in the prep cooler was broken. Operator removed the broken thermometer and will be using the handheld thermometer gun instead.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Tap for the handwash sink in the back was broken. Please ensure this is repaired to allow for proper hand hygiene.
