      • Observation (CORRECTED DURING INSPECTION): Reviewed Manual Wash method with operator and the signs are not being followed
      • Bleach sanitizer not ready at time of inspection -chlorine test strips no where to be found
      • Corrective Action(s): Proper Manual Washing:
      • Step 1: wash with detergent in left sink
      • Step 2: rinse thoroughly with warm water in the middle sink
      • Step 3: sanitize with bleach >100ppm as per test strips in the right sink
      • Air Dry
      • This is all indicated in the english and korean signs provided
      • Have your bleach sanitizer sprays/reservoirs prepped and ready at the beginning of production each day maintained >100ppm as per test strips
      • Obtain Chlorine Test Strips for regular testing of your sanitizer solutions

      • Observation: AGAIN personal effects being mixed in with customer food processing/dishwashing/storage areas:
      • -an entire wall of shelves in vegetable Walk-in Cooler for personal foods plus another next to the door
      • -the main processing table under the clock is loaded with personal foods/equipment
      • -the right side of the dishpit area is loaded personal dishware: plates/cups/bowls/ over 20 mugs
      • -back storage area next to garage has a barbecue unit with a propane tank apparently in use
      • Corrective Action(s): -allowance of only 2 shelving units for personal effects in Walk-in cooler
      • -remove ALL personal foods/equipment from the main processing table
      • -remove the barbecue unit with propane tank -that unit should not be used indoors (says right on the barbecue)
      • -There is ample room in the front office and employee dining area for personal effects to be stored

      • Corrective Action(s): Designated handsinks must be clear for use to ease it's use
      • Replace the dispenser in washroom for the paper towel rolls, remove the bar soap -only use single-dispensing soap

      • -Back storage area for goods -many parts cannot be accessed as there are no aisles or the goods are not on skids
      • -Some shelves in dry storage areas are lined with cardboard
      • Corrective Action(s): -Must be in a dispenser (spindle okay)
      • -organize the back storage area for goods -place in aisles so the goods cannot be accessed -recommend higher multi-level shelving. Also place goods on skids so they can be moved around easier -will facilitate cleaning and monitoring of pests
      • -Remove the cardboard liners -food shelving must be a cleanable surface like the painted shelves or Walk-in cooler shelves lined with hard plastic

      • Observation: - Rat droppings noted (minimal amount) noted under shelving in storage area and back storage area.
      • Corrective Action(s): - Operator cleaned up droppings at time of the inspection. Use bleach solution to disinfect areas.
      • - Traps present. Continue to monitor for further activity, cleaning up any additional droppings immediatley when noted. Cleaning up droppings is critical to determine if activity is current or from previous issues and it helps to prevent additional rodents from being attracted to the area.
      • - Ensure premises is maintained in a sanitary, uncluttered condition. Floors should be kept clear to facilitate cleaning and monitoring
      • - Pest Control will need to be contracted if issues persist

      • Observation (CORRECTED DURING INSPECTION): - Rodenticide noted in plastic container under shelving in back storage area. This is unacceptable in a food premises. Additionally, product was not stored or labelled properly
      • Corrective Action(s): - Operator discarded product at the time of the inspection. Do not use rodenticide inside the food premises. This can pose a food contamination risk. Use traps only.

      • Observation: Rat droppings noted in cluttered area in the back. Sticky traps laid throughout facility. Door sweep was replaced on one of the walk-in coolers, in process of installing door sweep on second walk-in cooler (for the time being, a piece of solid wood is placed at the bottom of the door when facility is not operating to prevent pest entry).
      • Corrective Action(s):
      • 1) Clean all rat droppings are soon as they are found using a 1:10 bleach solution (1 cup bleach in 10 cups water).
      • 2) Reduce clutter
      • 3) Ensure that all foods are kept in pest proof containers
      • 4) Seal any holes that pests may enter from.
      • 5) If rodent problem persists, you may have to hire a professional pest technician.
