      • Observation(s): Observed ice making machine having a build-up of slime on the inside. Ice machine needs to be emptied out, cleaned and sanitized to prevent ice contamination.

    • 4 - Are proper refrigeration, freezing and thawing procedures followed?
      • Observation(s): (1) Observed crates of unopened jugs of milk sitting out on the floor at room temperature. Please ensure crates of milk are stored in the cooler at 4°C at all times. (2) Cooler with milk was at 5°C during inspection, cafe was quite busy at the time and cooler was opened and closed frequently. Observed temperature logs indicating that cooler is normally at 4°C. Please continue monitoring the cooler closely to ensure temperatures do not fluctuate too much.
    • 8 - Are equipment, food contact surfaces and utensils washed, sanitized and stored in a manner that removes/prevents contamination?
      • Observation(s): Basin of bleach used for sanitizing food contact surfaces and wiping cloths found to be at 50ppm - must add more bleach to maintain 100ppm for adequate sanitizing.
