      • Observation: Rodent droppings was observed in the back storage room on metal plate next to door, and behind extra tiles.s
      • Corrective action(s): Remove rodent droppings. Clean and sanitize areas with droppings with bleach solution. Continue monitoring for rodent activity.

      • Observation: No staff on site holds valid FOODSAFE Level 1.
      • Corrective action(s): One staff member on-site must have valid FOODSAFE Level 1 at all times. Manager and one other staff member register in a FOODSAFE Level 1 course and email proof of registration to EHO. Adjust schedules accordingly to ensure that one staff onsite at all times if FOODSAFE certified.

      • Observation (CORRECTED DURING INSPECTION): 0-10ppm chlorine residual was detected from the dishwasher at the start of inspection; sanitizer had ran low.
      • Corrective Action(s): Supervisor replaced the sanitizer, dishwasher now has 50-100ppm chlorine residual.
      • Staff ran all previously washed equipment and dishes through the dishwasher again to be properly sanitized.

    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: There is a large gap in the ceiling directly above the back door entrance. Appears as if the cover was removed for mechanical work and not replaced.
      • Corrective Action(s): Cover the gap. This could be a pest entry point if left exposed.
      • Date to be corrected by: 1 week - email photo of covered gap to EHO via email.

      • Observation (CORRECTED DURING INSPECTION): Ambient air temperature measured 7.5 degrees C (the sandwich fridge) and sandwich was probed and interval temperature was 7.0 degrees C

      • Sandwiches should be moved into a different cooler with a temperature at or below 4 degrees C. Repair or adjust cooler to 4 degrees C or less.

      • 4.) Shelf under the coffee containers
      • 5.) Shelf under the baking prep counter.

      • Clean and sanitize the areas noted above. Ensure to follow pest control company's recommendations regarding sanitation.

      • Observation: Sandwich fridge in front of house had an ambient temperature of 7.5 degrees C. Temperature records indicated elevated temperature (7 degrees C - 10 degrees C for numerous months. Do not store PHFs until the cooler is repaired.

      • Observation:
      • - Mice droppings seen throughout.
      • - 1 dead mouse observed in the tincat trap placed by the wall leading to the back fire door.
      • Corrective Action(s):
      • - Replace the sticky trap in the tincat trap.
      • - Ensure regular cleaning is done to remove mice droppings and sanitize affected surfaces.

      • - Ensure ice machine gets cleaned & sanitized after turning off and emptying all ice out.
      • - Ensure to do a deep cleaning of whole storage spaces and floors by pulling out all items from cabinets & shelves. Sanitize affected areas.

      • Observation (CORRECTED DURING INSPECTION): Noted a coffee urn stored on it's side in one of the hand sinks at the front service area. Staff member said the urn will be rinsed out and refilled for coffee.
      • Corrective Action(s): Do not store coffee urns in hand sink. Coffee urns may be rinsed out and refilled between uses as long as they are maintained in a sanitary manner/location. Ensure coffee urns are put through the dishwasher if not in use. Suggest having a bus bin at the front area to collect any food equipment that needs to be taken to the back and put through the dishwasher.

      • Observation (CORRECTED DURING INSPECTION): Noted hand sink in the back are blocked with a tray of food equipment. Also noted a coffee urn stored in one of the hand sinks at the front service area.
      • Corrective Action(s): Ensure hand sinks remain unobstructed at all times. Hand sinks can be used as dump/fill sinks but should not have equipment stored over/in them.

      • Observation: Noted panini grills located along counter where customer chairs are located.
      • Corrective Action(s): Install a barrier or relocate panini grills so that the food and food equipment is physically separated from the public space/area in order prevent potential contamination of food and food equipment. To be completed within 2 weeks.

      • Observation: Noted food stains and food debris on the floor throughout the back area as well as boxes on the ground in the dry storage area and empty cans in garbage bags by the back door.
      • Corrective Action(s): Do a thorough cleaning in the above noted areas. Keep all boxes stored off the ground to facilitate cleaning and remove all stored garbage/recycling routinely to prevent the attraction of pests.

      • Observation (CORRECTED DURING INSPECTION): No sanitizer solution available for use in the front service area at time of inspection.
      • Corrective Action(s): Ensure sanitizer solution is readily available in each food preparation/handling area. If reusable cloth towels are used to wipe, ensure they are stored in a container of sanitizer solution. Otherwise, use single use paper towels.

      • Observation (CORRECTED DURING INSPECTION): A) Noted hand sink and the soap dispenser in the back food preparation area blocked with food equipment
      • B) Roll of paper towel at one of the hand sinks in the front service area was on the counter - no holder/dispenser. Roll can get went when picked up with wet hands after hand washing.
      • Corrective Action(s): A) Keep all hand sinks (including the soap and paper towel) unobstructed and fully accessible at all times.
      • B) Obtain a holder/dispenser for the roll paper towel at the front service area.
