      • Observation (CORRECTED DURING INSPECTION): Surface sanitizer spray bottles had >>200ppm chlorine measured. A fresh 200ppm chlorine prepared at this time. Staff was advised to have all prep surfaces sanitized using the solution.
      • Corrective Action(s): All food prep surfaces must be sanitized using 200ppm chlorine. Vinegar + water mixture is NOT an approved sanitizer to be used in a food service establishment.

      • Observation: Rodent droppings were observed on floors throughout the back space. Traps in place. All food stored in pest proof containers.
      • Corrective Action(s): Remove all droppings and sanitize affected areas EVERY MORNING prior to initiating any food prep.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): - Dishes/utensils (scoops, bins) were noted in the utility sink and on a drying rack on top of the grease trap. Dishes/utensil for the packaging area and store front bulk bins were being washed in the single compartment utility sink.
      • Note: Three compartment sink was being used for dishes/utensils from bakery production area
      • Corrective Action(s): - Do not put any dishes in the utility sink. This sink is for disposal of mop water. Wash and sanitize all dishes in the three compartment sink using the manual dishwashing method - Wash, rinse sanitize, air dry.
      • - Remove all dishes from the utility sink and re-wash and sanitize.

      • 401 - Adequate handwashing stations not available for employees [s. 21(4)]
      • Observation (CORRECTED DURING INSPECTION): - No soap was present at handsink in roasting area.
      • - No soap or paper towel were present at the sink on the west wall in bakery production area.
      • Corrective Action(s): - Ensure all handsinks (1 in roasting, packaging area, 2 in bakery production area) are alway supplied with liquid soap and paper towel.
      • - Liquid soap was supplied to handsinks.
      • - Paper towel supplied to handsink where it was lacking. *Install paper towel at handsink on west wall of bakery production area.

      • Observation: 1) Boxes of icing sugar and shortening stored on the floor in the bakery production area
      • 2) One light fixture in bakery production area was missing cover
      • Corrective Action(s): 1) Store all food products off on shelving off of the floor. Add additional shelving if required to accomodate all food products
      • 2) Replace cover on light fixture or replace bulbs with shatter proof bulbs to protect food from physical contamination.

      • Observation: - Mouse excrement (droppings and urine) was noted on the floor in several areas along the perimeter of the food premises including in the bakery production area (corner near flour bins, behind freezer), storage rooms and packaging/roasting area (under the oven).
      • Corrective Action(s): - Remove all moveable items from the floor, pull out moveable equipment and thoroughly clean along the edges of the floor along walls to remove all mouse droppings and sanitize affected areas with a bleach solution.
      • - Keep floor area clear to allow for cleaning and monitoring.
      • - Monitor for any further rodent activity. Ensure any additional droppings noted are cleaned up promptly and the area sanitized. Notify pest control technician of any areas where rodent activity has been noted for additional control measures to be applied (ie. traps, pest proofing).
      • - Maintain a high level of sanitation
      • - Continue to maintain regular pest control service and follow all recommendations of pest control technician. Email most recent service report to EHO for review.

      • Observation (CORRECTED DURING INSPECTION):
      • - Dough rolling machine in the back kitchen observed with flour debris.
      • Corrective Action(s):
      • - Staff stated this has been used about a month ago and equipment gets cleaned before usage. Ensure to clean & sanitizer immediately after each usage. Staff to clean the machine immediately.

      • Observation (CORRECTED DURING INSPECTION):
      • - Chlorine sanitizer available in spray bottle bleached out the test strip.
      • Corrective Action(s):
      • - The solution bleaching out the test strip indicates that the sanitizer is too strong (over 200ppm). Ensure to mix half a cap of domestic bleach to the spray bottle full of water. Ensure to equip a test strip for chlorine. 100-200ppm is the allowed range. Sanitizer was diluted at the time of inspection to measure 100ppm with test strips.

      • Observation (CORRECTED DURING INSPECTION):
      • - 3 Compartment sinks were empty and plugs were unavailable. Operator not aware of the 'wash, rinse, sanitize' dishwashing steps.
      • - Slicer used for turkish delights observed with sticky residues. Operator stated they were not used today.
      • - No sanitizer available for food contact surfaces.
      • Corrective Action(s):
      • - Operator was able to find one plug for the saniziting sink and filled up the sink with warm water and bleach to make 100ppm bleach sanitizer solution. Ensure all food equipment and tools are sanitized after washing and rinsing procedure.
      • - Clean and sanitize the slicer. Ensure to clean and sanitize all equipment immediately after usage.
      • - 200 ppm bleach sanitizer was made in empty bottle and was labelled as sanitizer. Ensure to use this spray to sanitize all food contact surfaces after cleaning.
