    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Oxivir ready to use sanitizer was being used for food contact surfaces. The sanitizer requires an after-rinse step and there is no means to test the concentration of the sanitizer.Obtain an approved food safe sanitizer such as 100 ppm Chlorine or 200 ppm QUAT based solution. Obtain appropriate test strips to regularly verify the strength of the sanitizing solution in use.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A temperature gauge was missing inside of the fridge where sandwiches are stored.REQUIREMENT: Obtain a temperature gauge that will confirm that the refrigerator is able to keep foods at 4C or less.REPEAT VIOLATION: Observed November 12, 2024.There was no thermometer in the fridge used to store sandwiches and fruits received for kid's lunch. Obtain a thermometer for the fridge to ensure foods are being kept at a safe temperature of 4C or less
