      • 1. High temperature rinse dishwashers -Rinse temperature should be checked daily for minimum sanitizing temperature 71 deg C at dish rack level. Thermometer probe onsite does not have a minimum/maximum setting to check for rinse temperature maximum achieved. 2. Surface cleaner RTU spray product from Ecolab (DIN 02523469) used for surface sanitizing of food contact surfaces. No test strips onsite to check sanitizer concentration. Obtain test strips from supplier to check daily in use.
