- When asked about manual dishwashing procedure, the operator informed that they soak the dirty dishes in bleach first, followed by a wash and rinse. Ensure proper two-compartment dishwashing procedure is followed where dishes are first washed with soap, followed by a rinse step and then placed into a sanitizer such as 100ppm bleach/chlorine for a minimum of two minutes.
