- Observation (CORRECTED DURING INSPECTION): Two small buckets of chickpea sauce were stored at approximately 50C. The food was prepared at 10:30 this morning, approximately 4 hours ago, and was hot-held in a bucket over the chafing dish compartment. A small amount of water was present in the chafing dish compartment.
- Corrective Action(s): The two buckets of chickpea sauce (approximately 500 ml each) were discarded at time of inspection. Use only designated chafing dishes in the chafing dish compartment so that your items can be held at 60C or greater. Do not place buckets in chafing dish compartments - they were not intended for this purpose and will not keep foods warm enough.

- Corrective Action(s): A thorough cleaning and sanitizing of the storage cabinet is needed. Use 1 part bleach, 9 parts water to remove all rodent droppings and saturate for ~15 minutes before removing the droppings. Contact professional pest control company immediately to reset traps and identify any remaining entry points.

- 3. Seal off all potential entry points, especially around the baseboards / walls.
- 4. Ensure back door of cafeteria lobby is fully sealed. There is currently a 1" gap near the bottom. Facility manager has decided to install a plate to prevent rodent entry near the bottom.

- Observation (CORRECTED DURING INSPECTION): The following items require further cleaning:
- 1. Knives and cutting boards in back corner of kitchen still contained food grime.
- 2. Dough mixer hook contains dried flour.
- Corrective Action(s): 1. Knives, cutting boards were washed with soap, rinsed, and run through the dishwasher at time of inspection.
- 2. Debris was scraped off the dough mixer hook and then wiped with a 200 ppm chlorine residual.
- Ensure that all equipment is cleaned and sanitized after each use. This was also discussed in the previous inspection.

- 1. Garbage bag used to store food products
- 2. Tomatoes and sauce containers do not contain any lids.
- 3. Tomatoes are left in the open inside the chest freezer on cardboard.
- Corrective Action(s): 1. Handyman voluntarily discarded garbage bag containing spinach at time of inspection. In the future, store food products inside a food-grade container. Garbage bags often have odor-suppression chemicals and are not safe to consume.
- 2. Obtain tight-fitting lids for tomato and sauce containers.
- 3. Discard the cardboard. Place tomatoes inside plastic food-grade container with tight-fitting lid.
- All food items must be in original packaging or in food-grade containers with lids to protect them from contamination.

- 2. Rodent droppings observed inside the cabinet underneath the two sinks in the children's lobby area. Droppings are confined to this space.
- Corrective Action(s): 1. Dead rodent removed at time of inspection, trap was reset by facility handyman.
- 2. Spray down rodent droppings with a strong bleach solution (1 part bleach, 9 parts water). Leave for 10-15 minutes, then wipe up with a paper towel and place inside a garbage receptacle. Ensure that you wear protective equipment (e.g. googles, gloves)
- You may have to temporarily remove the metal mesh inside the cabinets to remove the droppings. Ensure that you re-install the mesh properly afterwards.

- Corrective Action(s): You must ALWAYS wash, rinse, and sanitize your food equipment after use. No exceptions.
