- Insulation is coming out of the bottom of the dishwasher. Repair the sanitizer housing.Ensure that all hard to reach areas need cleaning (behind the dishwasher).Repair the counter.

- 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
- 1) The probe thermometer was not being sanitized in between probing different foods. The main food handler is only using running water.REQUIREMENT: Sanitize the probe thermometer between checking different food's temperature.2) The operator was poking tin foil, which may cause bits of foil to be entered into the food and ingested. This was corrected during the inspection.

- The following was observed which demonstrates the main food handler did not show proper food safety knowledge:1) Food handler was not aware what proper hot holding temperature was (>= 60C).2) Food handler did not probe all hot-held perishable food items until prompted by the inspector.REQUIREMENT: The main food handler must take food safety training.
