- Corrective Action(s): The rinse temperature must be at least 71 degC at the plate level. Get the dishwasher fixed. In the mean time, once the dishes have been washed in the dishwasher, sanitize them by soaking in the Quats sanitizer for 2 minutes in the 3-compartment sink before air drying.
