- Corrective Action(s): 1) Get the leak repaired. Ensure staff is wiping up the pooled water inside the cooler more frequently. If the leak cannot be repaired, you need to replace the cooler.

- Observation (CORRECTED DURING INSPECTION): There was no soap coming out of the dispenser at the hand sink. The paper towel dispenser was empty.

- Observation: Sauce stains noted on the wall across from the pizza oven by prep cooler 1. There appears to be grease accumulating on the exhaust hood even though the sign on the hood says no grease laden vapors.
- Corrective Action(s): Clean the walls. The hood must be cleaned regularly so that it's free from grease. You must have appropriate ventilation for the foods being cooked onsite.

- Observation: 1) The thermometer used for measuring the dishwasher temperature should have a min/max function where it records the highest and lowest temperatures measured inside the dishwasher during a wash. The current thermometer doesn't appear to have this function. It also steams up so that the numbers are not visible. Operator places the thermometer inside a cup when measuring the thermometer.
- 2) On reviewing the temperature log, it was noted that the dishwasher temperature was recorded as 12 degC. This is very low and most likely inaccurate.
- Corrective Action(s): 1) Replace the thermometer with one that has a Min/Max function. Purchase a shield to use with the thermometer instead of placing it in a cup.
- 2) The dishwasher rinse temperature should be a minimum of 71 degC at the plate level. Anything below this means the dishwasher isn't working properly and it should be fixed.

- Observation: 1) The seal around the door of the hot holding unit under the POS station is not intact so the door isn't closing completely. The temperature gauge is not working on the unit either. The temperature inside the warmer was 47 degC. Operator mentioned that the pizzas only stay in the warmer for about 15 minutes before they're picked up. Staff make pizzas close to the pick up times.
- 2) There's water pooling along the bottom inside Fridge #1.
- Corrective Action(s): 1) Replace the seal. Get the gauge fixed. The unit must be able to maintain a temperature of at least 60 degC.

- Observation: The hot holding unit was at 43 degC. There was no pizza being stored in it during the inspection. As per shift manager, the pizzas are only stored in the unit for a short period of time (~10 min) prior to pickup. The seal around the door is coming apart. The temperature gauge on the unit is not working. The dial that adjusts temperature doesn't have any numbers around it to indicate what temperature range the unit is set to.
- Corrective Action(s): Get all these items on the hot holding unit fixed or get the unit replaced. The temperature log indicates that the temperature of the unit today was 160 degF. During the inspection, the shift manager measured the temperature to be 97 degF. This is not acceptable. The hot holding unit must be able to maintain a temperature of 60 degC (140 degF) or above at all times.
