      • Observation (CORRECTED DURING INSPECTION): Dishwasher first two runs did not have a final hot water sanitizing rinse (<71C/160F measured inside of machine with different thermometers and temperature sticker did not change color).
      • Corrective Action(s): Machine was cleaned and re-filled during inspection. Temperature inside of the machine is not 71C or hotter. Temperature stickers left for operator to re-check later today. Maintain dishwasher so it is sanitizing all dishes and utensils.

      • Observation: Looked at dough mixer attachment with Manager in charge. It does not easily chip but there is a ridge that may make it harder to clean.

      • Observation (CORRECTED DURING INSPECTION): Dishwasher final rinse temperature did not reach 71C/160F inside of the machine (55-64C measured). 0ppm chlorine.
      • Corrective Action(s): Immediately use chlorine sanitizer (100-200ppm) as shown during inspection and wash, rinse, sanitize & air dry dishes and utensils. Use disposable utensils for customers if possible. Repair / service dishwasher so it can provide adequate final sanitizing rinse (71C/160F inside of machine) - as soon as possible.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Sanitizer concentration appears to continue to be an issue at premises. One bucket at food prep area measured 200ppm quats sanitizer, but spray bottle was well above 400ppm, and a second bucket at one of the baking stations did not have any detectable level of sanitizer. In addition, there was no sanitizer for wiping cloths at the coffee bar.
      • Corrective Action(s): The preference would be for operator to installl a sanitizer dispenser at the 3 compartment sink (as in the Skycafe location). This is eliminate user error when manually filling quats sanitizer dispenser. Coffee bar staff must store wiping cloths in sanitizer solution.

    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: Dough hook is the same as the last inspection, damaged and metal coating is flaking off and may lead to physical contamination of baked goods. This is a repeat violation.
      • Corrective Action(s): Dough hook must be replaced, resurfaced or repaired immediately. Operator has had 6 months since last inspection to address this issue.

      • Observation: Although improved since last routine inspection, rodent droppings were observed along the rear wall of the baking area, mostly at the rear door that leads to the rest of the building, but also along the walls of the bread baking area
      • Corrective Action(s): Continue to clean up droppings as they are seen, and continue to search for possible entry points (rear door). Continue with licensed pest control services.

      • Observation: 1. Quats sanitizer concentration is too strong, measure at 1500ppm.
      • 2. Dough mixer hook is damaged and metal coating is flaking off. This could introduce physical contamination to product.
      • Corrective Action(s): 1. Please mix solution to measure 200-400ppm. Read label for proportions, and use test strips as necessary.
      • 2. Replace dough mixer hook as soon as possible to avoid physical contamination hazards.

      • Observation: Observed rodent droppings in corners, under equipment and in hard to reach areas. These might be old, but this is unknown without frequent and thorough cleaning
      • Corrective Action(s): Please clean areas beneath dry goods storage, area around back door, area around side door (near sandwich prep station), and any other area where droppings are observed. A thorough clean will help determine whether there is new pest activity or not.

      • Observation: Fruit flies noted near back double sink (near stagnant water on floor) and mouse droppings noted on floor near back door /dishwashing area. Trap in this area is empty.
      • Corrective Action(s): ***Forward copy of last 3 pest control reports to Fraser Health as soon as possible. Pest control program to include cleaning floor nightly, cleaning spilled food daily, keeping food protected from contamination, clean and sanitize equipment after use, monitoring for pests, and follow directions from licenced pest control for sealing gaps etc. where pests may enter.

      • Observation: Many small flies (fruit flies?) noted in several areas such as near the dishwasher, near back door by dry storage shelves, etc. A few droppings noted on floor near walls. Note that several monitoring traps were checked and were empty.
      • Corrective Action(s): Provide copy of last report from licenced pest control to Fraser Health. Continue with pest control program. Keep premises clean and eliminate sources of water (such as dishwasher leak).

      • Observation: Improvements with pest control management noted. Some gaps under doors and along walls have been sealed. Food storage shelves have been re-organized to allow for easier cleaning and pest monitoring. Some items have been removed. Licenced pest control is being consulted.
      • Corrective Action(s): Continue to clean, monitor for pests, determine where pests may be entering and seal holes, and protect food from contamination. Provide a copy of your licensed pest control contract /report to Fraser Health.

      • Observation: Mice in premises. One bag of flour with hole in the corner of the bag. Some droppings noted on table used for storing food equipment.
      • Corrective Action(s): Inspect food and discard any food that is contaminated. Protect all food from contamination. Store food in pest proof bins or pest proofed rooms. Clean and sanitize all container lids. Clean and sanitize all equipment.

      • Observation: Numerous mouse droppings noted on floor along floor/wall junctions, on some tables, and behind equipment. One mouse in monitoring trap. Live mouse noted during inspection (under black plastic bin). Large gap noted at back double door (door to main kitchen).
      • Corrective Action(s): Operator advises they will close early to work on cleaning and pest control.
      • 1. Immediately ensure that food is protected from contamination.
      • 2. Seal all holes where pests may enter. Keep doors shut. Consult with licenced pest control.
      • 3. Deep clean entire premises.
      • 4. Clean and sanitize all work surfaces and equipment at the start of each day and clean up spills right away (update sanitation plan).
      • 5. Remove sources of food and water. Repair water leaks.
      • 6. Remove items not needed in premises as they provide harbourage for mice (evidence of mice in storage room).

      • Corrective Action(s): The double sink behind the coffee bar is to be used for food prep and one sink is to be designated for hand washing. This sink is to be accessible at all times. Clean and sanitize all utensils and dishes in the main dishwasher. Do not store dirty dishes in this sink. Keep hand sink area accessible for staff to easily wash hands. **A small, designated hand washing sink located closer to the coffee bar area is highly recommended.

      • Observation (CORRECTED DURING INSPECTION): Food staff hand sinks in coffee roasting and main bakery areas do not have paper towels. The sink behind the coffee bar area is not easily accessible (carts etc. in way).
      • Corrective Action(s): Paper towels provided during inspection. Keep paper towels in dispensers at all hand sinks. A designated hand washing sink for the coffee bar staff is to be easily accessible at all times (recommend a new hand sink closer to coffee bar).
