    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Ice scoop stored directly on surfaces of the ice maker. Store ice scoop in a container or any other sanitary manner to prevent contamination.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The hand sink in the pizza station was obstructed.Do not store the cart in front of the handwashing sink. All designated hand sinks must be easily accessible for hand washing at all times.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • There was a gap alongside the bottom of the back exit door. Seal the gap/install weatherstripping to prevent the entry of pests into the facility.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1) High touched surfaces such as equipment door handles had a buildup of dried food residue in several areas such as bakery walk-in cooler, upright freezer in the back, pizza preparation cooler. Please clean and always maintain in a clean and sanitary condition.2) The exterior surfaces of the bulk bins were dirty and require cleaning. Please clean and always maintain in a clean and sanitary condition

      • 1) A build up of food debris was observed in the hard-to-reach areas of the facility including but not limited to flour storage shelves, along the wall floor joint in the back, behind the cooking equipment in the front.2) A build of food debris and dirt observed on the walk-in freezer flooring. Please clean and always maintain in a clean and sanitary condition.

      • Tongs were stored above and hanging into a trash bin.Operator removed tongs to be washed. Please ensure that all serving utensils are stored in a manner that prevents contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. Cooked pasta was stored at room temperature.Staff placed the pasta into the cooler.2. Food that was stored in an ice bath was not fully submerged in ice, The temperature of the food items was 10-12C.Staff added ice to the ice bath. Ensure that all high-risk foods are maintained at below 4C or above 60C at all times.

      • The hand sink in the deli was obstructed.All designated hand sinks must be easily accessible for hand washing at all times.

      • There was food debris and dirt accumulated on the floors of the walk-in coolers.Thoroughly clean these floors.
