      • The ice scoop in the pizza serving area was observed to be stored on top of the ice machine. Ensure that the ice scoop is stored in a clean container to help prevent contamination. The operator provided a clean container for the ice scoop during the inspection.

      • Several holes and/or gaps were observed around pipes leading into the walls throughout the facility which could be potential routes of entry for pests. Ensure that the indicated gaps are sealed to help prevent pests from entering and harboring in the facility.

      • A large crack was observed on the top surface of a wooden food prep table in the pizza prep area which makes the surface difficult to clean and sanitize. Ensure that the indicated wooden prep table is either sealed to be smooth and easy to clean, removed from the facility or replaced with a prep surface that is smooth, durable and easily cleanable.

      • Quat sanitizer buckets throughout the kitchen tested low, ~50ppm quat. Buckets were refilled during the inspection. Facility is to ensure these buckets are changed frequently to test 200ppm quat.

      • Temperature logs for the Catering reach-in cooler are not being maintained. Ensure all temperature logs are being accurately maintained at all times.
