    • Food Safety Plan/Sanitation Plan
      • Cleaning and sanitizing required.
      • Operator to clean and sanitize the following areas: - Freezer door seals (clean all around freezes doors and its seals). - Bottom shelving unit below pizza display and payment counter and clean cabinet base/carcass. Comments Fridges keep food below 4°C. Temperatures are monitored and recorded daily. Integrated pest management plan is posted and checked/initialed by staff. Liquid soap, hot water and paper towels are provided at designated handsink. QUAT sanitizer is at required concentration. Ensure compliance with City of Nanaimo scating vs. washrooms for public.

      • Cut produce is not labelled with date prepared in the walk-in fridge
      • Operator to date prepared food in the walk in fridge (ie: sliced meats/veggies, etc.). Comments Operators have completed the following: Premises has been cleaned and sanitized throughout. Pest control company has been contacted and is schedule for site visit later today - operator to forward invoice/inspection report by pest operator. Operator has adjusted shelving so that it can be easily cleaned underneath. Integrated pest management plan has been completed and posted by operator. FoodSafe completed by operator - valid until March 10, 2031.

    • Critical Improper Cleaning, Sanitizing of Equipment and Utensils
      • There is a buildup of grease / food / mold in many parts of the food premises.
      • Premises requires a thorough cleaning in every area (ie. walking in cooler inside equipment, walls, behind equipment, shelving etc.).
    • Food Not Protected - General
      • Foods are not dated in walk-in fridge.
      • Operator to date prepared / sliced / portioned food items.
    • Inadequate Insect / Rodent Control
      • There are signs of rodents in the front service area.
      • Operator to contact pest control company (last services was June 2025 invoice). Operator to increase licensed pest control visits. to weekly from monthly. Operator to have integrated pest management program in place immediately. Have written plan completed by March 13, 2026.
    • Improper Construction / Maintenance of Establishment
      • Dough shelving in walk-in fridge -> staff cannot clean under shelving.
      • Operator to change / alter shelving so that food is stored at least 6 inches off the floor so staff can clean and sanitize. Comments Fridges: keep food below 4°C. Quat sanitizer is @200 ppm. Liquid soap, hot water, paper towels are provided at designated hand sink. Temperatures are monitored and recorded daily. Reinspection Friday March 13, 2026. All items are to be completed.
